Fixin "Champ Perdrix" 2021 Domaine Bruno Clair
Domaine Bruno Clair's Fixin “Champ Perdrix” is a fine Pinot Noir from vines planted in 1977. These vineyards cover an area of 0.1887 hectares and are rooted in a clay-limestone soil. The southeast orientation of the vineyards, located at an average elevation of 310 meters, provides excellent sun exposure, promoting optimal ripening of the grapes.
Vinification of Fixin “Champ Perdrix” involves the use of 30-50% whole bunches, with maceration lasting 10 to 15 days in wooden vats. This traditional method allows the best extraction of the tannins and aromas characteristic of Pinot Noir. The wine is then aged for 18 to 20 months in oak barrels, about 20 percent of which are new, adding complexity and depth to the flavor profile.
Organoleptically, Fixin “Champ Perdrix” shows a brilliant ruby red color. On the nose, it offers an intense bouquet of red fruits, such as cherry and raspberry, with subtle floral notes. On the palate, the wine has a firm attack and good length, with a well-balanced tannic structure and pleasant freshness. The minimum recommended aging capacity is 3 years, during which time the wine develops further complexity and finesse.
This wine is ideal with white meat dishes, light game and soft cheeses, enhancing the flavors with its elegance and liveliness.
