Gevrey-Chambertin 2021 Domaine Fanny Sabre
Domaine Fanny Sabre's Gevrey Chambertin is made with Pinot Noir grapes from the village of the same name in the northern part of the Côte de Nuits in Burgundy. The grapes come from Domaine-owned vineyards located in the prestigious "Le Combe de Laval," "La Justice," and "La Combe d'Orveau" plots.
The vineyards are between 40 and 70 years old and are cultivated using organic methods. The vines are pruned using the Guyot system and the bunches are controlled so as to achieve low yields per hectare. The grapes are harvested by hand.
Fanny Sabre, the young owner and winemaker of the Domaine, makes organic wines with the goal of preserving the highest expression of terroir. The grapes are vinified with alcoholic and malolactic fermentation in cement and oak tanks. Aging lasts 18 months in used oak barrels.
Gevrey Chambertin 2021 shows a deep ruby red color. The nose has aromas of small red fruits such as raspberries and blackberries, floral and mineral notes. In the mouth it is an elegant, fresh wine with silky tannins and a long, fruity finish. It expresses the full potential of Pinot Noir from the village of Gevrey Chambertin.
