Bourgogne Hautes-Côtes de Nuits Louis Auguste 2021 David Duband
Domaine David Duband's Bourgogne Hautes-Côtes de Nuits Louis Auguste 2021 is made from 100% Pinot Noir grapes from approximately 50-year-old south-facing vineyards from limestone and marl soils. The grapes are harvested strictly by hand, selected and vinified with 40% whole bunches for about 2 weeks.
After fermentation, the grapes are pressed and the wine is racked 30% into new barrels and 70% into first, second and third passage barrels. After 14 months of ageing, the wines are racked into vats, where they settle for about 3 months before being bottled without filtration or ageing.
David Duband's Bourgogne Hautes Cotes de Nuits Louis Auguste 2021 expresses a bright ruby red colour to the eye. The nose gives aromas of red and black fruits plus notes of liquorice, for an elegant, balsamic sip with a spicy note.
