Il Burbero IGT 2019 Collecapretta
Burbero 2019 is a natural red wine produced by Collecapretta, a farm owned by the Mattioli family, located in the Martani Mountains in the province of Spoleto. It is made from a blend of 80% overripe Sangiovese, 10% Ciliegiolo and 10% Merlot grapes from vineyards cultivated in the hills according to the traditional Umbrian espalier method.
Like the other wines from the Collecapretta estate, "Il Burbero" comes from organic cultivation, without chemical intervention in the vineyard, where the estate allows itself to use only organic fertiliser produced by its own animals. In the cellar, the same non-interventionist philosophy is followed, spontaneous fermentation without temperature control, use of yeasts from the grapes or from the cellar itself, no filtration or clarification, zero added sulphur.
"Il Burbero" IGT 2019 Collecapretta is aged in fibreglass containers. It has an intense ruby red colour in the glass, while the nose expresses an aromatic profile characterised by ripe notes of dried fruit, dried flowers, cloves, prunes and iodised notes. In the mouth, the flavour is firm and dry with a nice savoury finish. A wine that beautifully accompanies game meat and medium mature sheep's cheese.
