La Pierre de Sysiphe 2014 Les Bories Jefferies
La Pierre de Sysiphe 2014 is a red wine from Launguedoc Roussilon produced by Domaine Les Bories Jefferies. It is a blend of Carignan and Grenache Noir, which come from soils located next to a lava flow on lands of stones and basalt. It is made according to the principles of natural agriculture, with no chemicals and minimal intervention both in the vineyard and in the cellar. Fermentation takes place spontaneously using indigenous yeasts with carbonic maceration for about 1 month, while the wine is aged for 11 months in steel tanks. The "La Pierre de Sysiphe 2014" is a wine that when young has a lot of acidity while it is able to express great balance after a few years of aging, when even the tannins become silky. It expresses on the nose hints of Mediterranean herbs, fruits and great minerality, for a balanced and long sip.
