Le Papillon Blanc Sans Soufre Ajouté 2017 Domaine Milan
Le Papillon Blanc 2017 is a white wine from Provence produced using natural methods by Domaine Milan. It is made from a blend of Chardonnay, Grenache Blanc, Rolle, Roussanne and Muscat Petit Grains, from vines about 20 years old growing on soil characterised by a clay and limestone subsoil, with a dominant presence of blue marl.
Yields in the vineyard are very low and organic and biodynamic farming principles are followed with full respect for the terroir of origin. After harvesting and soft pressing of the grapes, the must is fermented spontaneously with indigenous yeasts in cement tanks. Then, without filtration or the addition of sulphur dioxide, the wine is transferred into barriques, where it is left to age on its fine lees for a total of 5 months.
The Sans Soufre Ajouté Le Papillon Blanc shows a luminous straw yellow colour in the glass, while the nose offers mainly fruity and spicy scents, with mineral notes. The taste is medium-bodied, fresh, savoury and with a finish of good persistence.
