Le Papillon Rouge Sans Soufre Ajouté 2020 Domaine Milan
Le Papillon Rouge 2020 is a French red wine from Provence produced by Domaine Milan. The grapes come from vines about 15 years old that grow in soils characterised by a clay and limestone subsoil, dominated by blue marl.
The yields in the vineyard are very low (no more than 35 quintals per hectare) and organic and biodynamic farming practices are adopted with full respect for the environment and the balance between the land and the hand of man. Henry Milan's aim is to produce authentic and genuine wines, a pure expression of the terroir of Provence. Fermentation takes place spontaneously with indigenous yeasts in cement, with maceration on the skins for 6 days and without any clarification or addition of sulphur dioxide, after which the wine is left to age in cement on the fine lees for a few months, until it is considered ready.
Le Papillon Rouge Sans Soufre Ajouté shows an intense ruby red colour to the eye, with an intense nose of mainly fruity and floral aromas. The taste is light, drinkable and fresh with well-blended tannins and a good persistence on the finish.

VINIFICATION: Maceration of unstemmed grapes for 6 days and spontaneous alcoholic fermentation with indigenous yeasts in cement. No clarification, filtration or addition of sulphur dioxide, several months' refinement in cement on the fine lees.
