Macon-Davaye 2018 Jeremy Recchione
Mâcon-Davayé 2018 is a white wine made from Chardonnay grapes from vineyards over 60 years old located in the commune of Davayé, in the Mâconnais wine region. The clay and limestone soils give the wines concentration and elegance.
Jeremy Recchione follows organic and biodynamic viticultural principles. Yields are extremely low and harvesting is done by hand, with rigorous selection of the grapes. The grapes are softly pressed and the must ferments in barrels where it matures for 10 months. Regular batonnage is done to bring more creaminess and complexity to the wine.
The 2018 Mâcon-Davayé has a light straw yellow color and an intense bouquet with hints of citrus, acacia flowers and light toasted hints. The palate is fresh, taut and elegant, with a nice minerality and savoriness balanced by the creaminess brought by the batonnage. The finish is long and persistent. It pairs perfectly with fish dishes, vegetables and cheeses.
