Mère Lamoureux 2020 Domaine de Trivel
La Mère Lamoureux is a complex white wine made from Chenin Blanc grapes produced by Domaine de Trivel, which is part of the range of barrel-aged wines made from grapes from a single parcel.
The Chenin Blanc grapes from which this wine is made grow on deep clay soil with a stony surface horizon, which stores heat during the day and releases it at night. Here, the vine can plunge its roots deep into the soil to draw on the richness that the clay offers. It also finds coolness and humidity, far from the stones that heat the surface. The vine finds a balance that it then expresses in its grapes, giving a rich and subtle terroir wine with a real personality.
After manual harvesting, the grapes are destemmed and slowly pressed for about 8 hours. After pressing, the first step of the winemaking process is the decanting of the must, which is done statically, simply waiting for the particles to settle to the bottom of the tank. After 12 to 15 hours of decanting, the must is transferred to the new tank, where it will ferment spontaneously thanks to the indigenous yeasts. After racking, the wine is aged in Burgundy barrels.
The fermentation is spontaneous, without any addition, and takes more or less time depending on the cuvée.
La Mère Lamoureux is a great expression of Chenin Blanc with a fruity and fresh nose, a full, elegant and tasty mouth with a long and persistent finish.
