Meursault Limozin 2021 Fanny Sabre
The Meursault Limozin by Fanny Sabre is an extremely precise and delicate wine, characterized by intense notes of citrus, apple, flowers, minerals, freshly ground butter, and toasted pine nuts on the nose. On the palate, it is fresh and sleek, with abundant citrus notes and a clear calcareous minerality that imparts a long finish. It is recommended to serve it with lobster, crayfish, grilled or braised fish dishes, preferably accompanied by butter-based sauces. This wine is enjoyable to drink right away but can also be aged for over 10 years.
The terroir of the Limozin vineyard is located northeast of Charmes and Genevrieres, on a 0.13-hectare plot characterized by calcareous clay soil with deep limestone layers and gravel presence, ensuring excellent exposure and drainage.
The grapes used for this wine are exclusively Chardonnay from vines over 50 years old. Harvesting is done by hand, and spontaneous fermentation takes place in oak barrels, with a maturation period of 14 months in large barrels and pièces. The vineyard is cultivated entirely organically, with manual labor and no use of herbicides. Wine production is on a small scale, with meticulous attention to detail in the cellar. During the vinification process, no synthetic chemicals are used, only natural treatment techniques.
