Morgon Cuvée 3.14 2014 Jean Foillard
Morgon Cuvée 3.14 is a natural wine produced by Jean Foillard from Gamay grapes grown on old vines from the Côte de Py, on soil composed mainly of schist and manganese. Domaine Jean Foillard follows the principles of biodynamic agriculture, whereby no chemicals are used in the vineyard and human intervention is reduced to a minimum.
Cuvée 3.14 is only produced in the best years, when the grapes reach the best possible quality. Harvesting is carried out manually and is generally delayed compared to the standards of the region, the grapes are kept at a low temperature for several weeks before being sent to the typical semi-carbonic fermentation with indigenous yeasts for about 9 months. The wine is not filtered before bottling and naturally there is no addition of sulphur dioxide.
Foillard's Morgon 3.14 is dark ruby red in the glass, with an elegant and complex nose alternating between dark berry fruits such as raspberry and blackberry, liquorice and rhubarb, cinnamon, tobacco and spices. In the mouth it is a full-bodied, important and elegant wine with an elegant tannic texture, very persistent with a nice savoury note.
