After manual harvesting, the unstemmed grapes are gently pressed, and the free-run juice begins spontaneous fermentation with only indigenous yeasts in stainless steel autoclaves. This process is carefully monitored and halted when the wine reaches an alcohol content of 5.5%, thus retaining a natural residual sugar and a lively effervescence. The wine is then aged in steel before bottling without fining and with light filtration.
