Ornellaia 2000 Tenute dell'Ornellaia
Ornellaia 2000 Bolgheri Superiore is a fine wine produced by Tenute dell' Ornellaia. This bottle best represents the Tenuta dell'Ornellaia company and the territory of origin, where the Bordeaux grapes manage to reach peaks of excellence on the Italian territory. The secret of this wine, which has made it so famous in the world, is the terroir and at the same time the obsessive attention paid to each working phase: starting from the grape harvest, strictly manual. Fermentation takes place in steel vats with a maceration of 10-15 days. The aging takes place in barriques, 70% new, for about 18 months, with the grapes being assembled after the first 12 months of aging, and final resting in the bottle for a further 12 months. A label that can not miss in the cellars of fans of great wines. The color of this Ornellaia 2000 appears a deep and luminous ruby red. The nose expresses an intense and complex bouquet of red fruit, spices, earthy and baslamic notes, tobacco and coffee. The sip is full and very long: an adjective manages to express it at its best, and is "velvety". GRAPES: 65% CABERNET SAUVIGNON 30% MERLOT 5% CABERNET FRANC
VINIFICATION: The grapes were handpicked in boxes of 15 kg each and selected manually before being destemmed and subjected to a light pressing. Alcoholic fermentation took place partly in medium-capacity wooden vats and partly in stainless steel vats, at a temperature not exceeding 30 ° C. Each variety and parcel was refined separately. The maceration lasted for 25-30 days after which the wine was racked into French oak barriques (70% new barriques, 30% second passage barriques) where the malolactic fermentation ended. The aging in barriques lasted for a total of 18 months in a temperature controlled environment at the Tenuta dell’Ornellaia cellar. After the first 12 months of aging, the assembly was carried out, after which the wine was reintroduced in the barriques for a further 6 months. The wine was then subjected to further refinement in the bottle for 12 months before being placed on the market.
