Calabretta is a Sicilian winery located in Randazzo, on the northern side of Mount Etna. The company is now run by the fourth generation, represented by Massimiliano and his father Massimo, who cultivate the estate's twelve and a half hectares of land by recovering old vines, dry stone walls and planting new and old vines, preferably free-range.
According to a philosophy based on total respect for nature, no chemicals are used and only minimal doses of sulphur and copper are used, with green manure, manual pruning and manual harvesting. The lava soil, the wide temperature range between day and night and the good exposure to the sun mean that the grapes ripen perfectly in mid-October. As in the vineyard, the processes in the cellar are completely natural: fermentation, precipitation and spontaneous clarification.
Thanks to this care, the wines obtained reawaken the sense of smell and taste, reviving scents and flavours that belong to a memory that has now almost disappeared from this sacred place. In addition to the beautiful Minnella and Carricante whites, we would like to mention the Nerello Mascalese Vigne Vecchie and the Piede Franco, born of Massimiliano's desire to plant new vines without American feet, in one of the very few territories that allow it.
