Vincent Dauvissat, the history of Chablis wines
Vincent Dauvissat is one of the greatest producers in terms of quality of the whole Burgundy and together with Raveneau the most important interpreter of Chablis wines, a wonderful area for those who love straightforward, fresh acid and mineral chardonnay.
Vincent approached the world of wine in 1976, when he started working in the family Domaine then led by his father, to take the reins in 1988. For years now, he has been considered one of the two fathers of the Chablis denomination together with the aforementioned Domaine Ravaneau, thanks to wines with an unmistakable style, with a superior technique and absolute purity.
Since 2002, the Domaine Dauvissat has been working in biodynamic agriculture, the natural wines of Dauvissat are born spontaneous fermentations, without clarification and batonnage. The vinification and subsequent maturation of the Chablis Dauvissat wines takes place according to tradition in steel and for a small part in wood, without ever exceeding, there is in fact no trace of wood on tasting.
Domaine Dauvissat has 14 hectares of which 2.70ha of Chablis Grand Cru for an average production of 80,000 bottles.
The Chablis Dauvissat are wines already enjoyable in their youth with a full and elegant juice but with almost infinite aging capacity, given the size of the Domaine, unfortunately the bottles are subject to speculation and are in fact unobtainable in the market.
We are therefore in the presence of a sacred monster of Chablis wines, a character and a Domaine that have made and continue to make the history of the denomination.
