Mathieu Cosme is a winemaker-rugby, who would live perpetually among the rows. Biodynamic production, soil work on horseback, spontaneous fermentation (even in the Brut, the must of the second fermentation in the bottle is used for the following year), a continuous search for the expressive purity of Chenin. Enthusiasm, passion, love for the territory are perceptible in every word and gesture if you go to find it.

Noizay is located a few kilometers east of Vouvray, with vineyards overlooking the Loire and more closely a small tributary, La Cisse. A vine heritage, that cultivated by Mathieu, with centenarian strains and a median age ranging from 40 to 60 years depending on the parcels. In particular, the business portion of Les Enfers is isolated and protected by a grove, and therefore Mathieu is particularly proud of it, being able to take care of it without worrying about what the neighbors do to their vines.
