Domaine De l'Arlot is a historical winery of Bourgogne located in the tiny commune of Prémeaux, south from Nuits St Georges.
The origins of the Domaine date back to the eighteenth century and are connected to the figure of M. Jean-Charles Vienot, owner of a building and vineyards in Prémeaux; he decided to erect a wall around the domaine giving life to the famous "clos de l'Arlot".
In 1891 the property was sold to a wine merchant, Jules Belin, who enlarged it by acquiring what became the other jewels of the winery, the "Clos des Forêts Saint Georges" and the "Clos du Chapeau". Currently the domaine is run by Christian Seely with the technical support of enologist Géraldine Godot.
The winery since 2000 follows the principles of organic farming and in 2003 the transition to biodynamic farming took place, according to the ideal of a viticulture based on the respect of natural balance, which allows grapes to express the authenticity of the territories they belong to. Interventions in the vineyard and in the cellar are minimal: the manual harvesting takes place when the grapes are fully ripe, with a careful selection of them, the alcoholic fermentation takes place spontaneously with gentle maceration according to the different vintages; after fermentation, the red wines are transferred to small oak barrels, while the white wines ferment directly in small wood.
Oak barrels are toasted in a careful way in order to allow the following malolactic fermentation to take place spontaneously in springtime with the natural raising of temperatures. At this point it is essential the tasting from the casks from which it will be decided at the moment of bottling, which is done without any filtration.
