Domaine de l'Enclos is located in the heart of Chablis, in Burgundy.
The company is divided into 29 hectares of Chardonnay grape vineyard, of which 6 certified organic hectares and 23 hectares in conversion to organic.
The vineyards are located on the 4 levels of the Chablis denomination and in particular on some of the most beautiful terroirs of the vineyard.
The estate is located in the heart of Chablis in a large property, former residence of the monks of the Abbey of Pontigny, which includes a large 19th century building and a partially underground cellar. The sons of the owner Romain and Damien, passionate about wine, in 2005 began producing their Chablis in a small corner of the father's large cellar.
A few years later, however, Father Pascal Bouchar sold the company, its vineyards and the proceeds from the sale passed into the hands of his sons Romain and Damien Bouchard who had to build a new winery in 2016. This, together with the transition to agriculture organic, have sanctioned the development and success of the Domaine.
As already said, today the vineyards owned by 29 hectares of which 6 hectares are certified organic and 23 hectares in organic conversion. Each step of the production is carried out with meticulous care and attention, starting from the vineyard and the harvest. The winemaking is traditional but with the modern principles of management of the cellar and the energy needed to work. Gravity guides the process in the two-level cellar and the temperature is controlled by a thermal heat pump and concrete insulation high efficiency. Aging takes place in stainless steel and in French oak barrels.
