DOMAINE DE MOOR
Domaine de Moor is located in Chablis, in the village of Courgis, and is managed by Oliver and Alice De Moor. The vineyard spreads for about 7 hectares (about 7 acres) and it is cultivated according to natural farming principles (since 2005 the winery received the Ecocert certification).
They mainly cultivate white berried grapes such as Chardonnay, Sauvignon Blanc and Aligoté and the vineyards are located between the villages of Chablis, Saint-Bris, Bourgogne Aligoté and Chitry. As already mentioned, they follow principles of natural and sustainable agriculture where all chemical substances are replaced by natural preparations made of sulfur and copper as well as plant extracts, for a production philosophy based on simplicity and genuineness.
The goal is to reach the highest quality of the raw material, a fundamental element to produce high level wines, for this reason grapes are harvested when they are at the optimal maturation. Harvesting is done by hand and the aging process takes place in wooden casks for a period ranging from twelve to sixteen months.
