DOMAINE DIDON
In the heart of Chassey-le-Camp, Côte Challonaise, lies Domaine Didon, a 2-hectare haven where David and Naïma Didon cultivate their biodynamic vineyard. Plowing by horse and manual tending, they honor Burgundy's classic clay-limestone soils, home to Pinot Noir, Aligoté, and Pinot Blanc vines dating back to 1947-1960.
In 2017, the Didons fulfilled their dream, taking over 'Vignes Blanches,' a historic 2ha lieu-dit in Bouzeron, part of the AOC Bouzeron. The vineyard, with its east-facing slope and dense yellow limestone soil, stands as one of the village's finest. David, a seasoned viticulturist, brings a decade of experience from Volnay and collaboration with renowned winemakers.
Biodynamic principles guide their hands-off approach in the cellar. Whites undergo whole bunch pressing, while the red enjoys a brief 10-day maceration on skins. Fermentation occurs in amphorae, barrels, and fibreglass, with wines resting on lees for about a year before minimal sulphur additions at bottling.
