Domaine des Monts Luisants: Burgundy Pinot Noir
Domaine De Monts Luisants is a 3.4 hectare family winery located in Burgundy, in the village of Morey Saint Denis, near the rhymed villages of Gevrey Chambertin and Chambolle Musigny. The company was created by Bernard Dufouleur in the mid 70s. His son Jean-Marc took over the property in 1999 and began to recover his father's vineyards, producing his first vintage in 2000.
The Domaine des Monts Luisants produces only red wines from Pinot Noir grapes that grow on stony clay-calcareous soil, with vines over 45 years old. The company philosophy is to intervene as little as possible both in the vineyard to obtain healthy grapes and in the cellar where the use of chemical substances is forbidden. Harvesting is carried out when the grapes are fully ripe, fermentation is spontaneous in whole bunches in open vats, with cold maceration and temperature control.
The wines then mature in French oak barrels for about 18 months, with a maximum of 15% new, the rest is one to five years with only careful toasting. This gives the wines a great elegance and aromatic complexity.
