The Edoardo Dottori winery is a small production company located in the town of Maiolati Spontini, in the heart of the classic Verdicchio dei Castelli di Jesi area. Led by young Edoardo, who passionately devotes himself to the enhancement of the princely grape variety of the Marche region.

Since the start of operations in 2018, Edoardo has chosen to follow the dictates of organic farming, with the utmost respect for the environment and local tradition. In addition to wine, he also produces an excellent extra virgin olive oil.

The estate vineyards, just over 5 hectares, are mainly dedicated to Verdicchio, with small percentages of other native grape varieties such as Montepulciano, Trebbiano and Malvasia. The soils are mainly clayey, with a good presence of limestone, ideal for enhancing the qualities of the grapes.

Harvesting is by hand, and soft pressing follows for the white grapes. Fermentations take place spontaneously in steel and cement containers. The entire production process aims to preserve the sincere expression of the fruit and terroir.

The true jewel of the production is the Verdicchio Classico Superiore "Colle Bianco," from grapes from a north-facing vineyard, which gives freshness and aromatic finesse.
