In the picturesque landscape of the Châteauneuf-du-Pape vineyards, Domaine Elodie Jaume stands out as a young yet storied entity. Founded in 2017 as a result of a shared family property, recognized in Châteauneuf-du-Pape since 1826 (Domaine de Chanssaud), Elodie, driven by innovative ardor and a desire to craft wines bearing her signature, embarked on her journey in the world of wine.

Guided by a fervent curiosity and a determination to explore new horizons, Elodie spent six months vinifying at Domaine Cooper Mountain in Oregon, United States. An experience that enriched her knowledge and helped shape her approach to viticulture. Upon her return to her homeland, she wholeheartedly embraced organic farming and biodynamic practices, seeing them as the most authentic means to express the identity of Châteauneuf-du-Pape's magnificent terroirs.

The 5 hectares of vineyards that Elodie cultivates with dedication and passion are nestled on the northern slopes of the plateau de Cabrières, where old vines of Grenache and Mourvèdre, some dating back 70 years, sink their roots into clay-sandy soil dotted with pebbles. These noble grape varieties, typical of the Rhône region, find their ideal environment here to express their purity, finesse, and freshness, fully embodying the soul of the terroir.

Elodie's commitment extends to the meticulous care of the vines, where herbal teas and biodynamic preparations are applied with scrupulous attention to each individual parcel. These practices not only nourish the soil and plants but also enhance their authenticity and vitality, imparting a true expression of the terroir to the wines.

From the outset, Elodie has opted for a hands-on approach, separating the grape clusters from her 8 parcels into small vats to fully understand the identity of each. Her winemaking philosophy embraces naturalness, eschewing any oenological additives except for a minimal amount of sulfur dioxide. Aging in concrete vats imparts the wines with an elegant tannic structure, inviting softness, and pleasant freshness.

The culmination of this commitment materialized in 2020 with the release of the second vintage of her "A en perdre le soufre" cuvée, vinified without the addition of sulfur. A red Châteauneuf-du-Pape cuvée, following the same philosophy, was vinified for the first time with the 2021 harvest, promising to carry forward the vision and distinctive imprint of Domaine Elodie Jaume.
