ENTROPY WINES

Entropy wines is a winery located in Baw Baw County, Victoria, Australia. Ryan Ponsford, who runs the winery, produces wines sustainably, with minimal intervention and an environmentally friendly organic approach.

Ryan started working with Bill Downie with whom he produced his first wine under the Entropy label in 2019 and was awarded the Young Gun of Wine Award in 2022. He uses a holistic approach to improve the biodiversity of the vineyards he cultivates. One of these was a neglected vineyard in Willow Grove, which he is gradually rehabilitating.

The producer chooses to select old abandoned vineyards, and is planning to plant his own vineyard from scratch, with high density and high yield. The grapes cultivated are savagnin, sauvignon blanc, semillon, pinot noir and syrah, from which he obtains unique wines, with character and expressive of their terroir.

Yields in the vineyard are minimal, in the cellar fermentation is spontaneous with indigenous yeasts and ageing takes place in old, used barrels. Entropy produces authentic and pure wines, completely disinterested in following fashions, but only in representing a territory in all its authenticity.
