Fabien Coche, biodynamics in Burgundy
Fabien Coche is a Burgundy winery located in Meursault, in the heart of the Cote d'Or. The Domaine has 12 hectares of vines distributed between Meursault, Pommard, St Aubin, Auxey-Duresses, Monthelie, Saint Romain and Montrachet. In Mersault on the Lieu Dit "Limozin" the vines are more than 100 years old.
Since 2001, the winery's philosophy has been based on organic farming principles applied both in the vineyard and in the cellar, which include: very low yields, organic treatments limited to sulphur and copper for the vineyard, the use of indigenous yeasts and no filtration or clarification. This orientation towards a natural type of viticulture has increased over time and since 2020 the Domaine has moved towards a biodynamic orientation. In addition to this care, the terroir is particularly well-suited where the soils are clay-limestone and slightly marly.
The whites are macerated for 12 to 24 hours and matured for 12 to 18 months. The reds macerate for 20-25 days, followed by 8-12 months of barrel ageing. Fabien Coche's wines are captivating for the elegance of their relationship with wood, which is discreet and well integrated, producing Chardonnay of incredible expressive finesse.
