Fallet Prévostat is an important producer in Avize. Its One wine only fermented in barrels and offered in three versions (Brut, Extra-Brut - the best - and Nature) after a long maturation on the lees.

A champagne with personality, structure and elegance. They are produced in very limited quantities and in an artisanal manner, so much so that it is never possible to find bottles that are identical to each other. Minimalism and authenticity are the key words of the philosophy of Prévostat, which manages its vineyards with maniacal care.

The vines are about 70 years old, the grapes are harvested when fully ripe and the wines mature in old wooden barrels.
