FREDERIC COSSARD
Frederic Cossard Burgundy Wines
Frederic Cossard is a boy who makes natural wine in Saint-Romain, in Jura.
After working for years first in the milk trade and then as a wine merchant, he decided to start producing his own starting his business in 1996 where he now cultivates 7 hectares (all leased), right in Saint Romain.
Here he bought a house with a cellar in the village in 1998, where he moved. His work is based on absolutely natural viticulture principles and far from the use of any chemical: winemaking occurs spontaneously without added yeasts, and is free of sulfur dioxide.
Cossard uses a long maceration of five or six weeks, and malolactic fermentation occurs while the wine is still on the skins. The barriques that he uses for the maturation of his wines are cleaned with ozone, not with sulfur dioxide. The passion for work and for his land has allowed Frederic to be recognized for the quality and purity of his wines.
