Biodynamic Champagne by Georges Remy
Georges Remy's is a winery of just 4.6 hectares that is certified organic and located in Bouzy, in the heart of the Montagne de Reims. The young Georges Remy is in the third generation of winegrowers after his grandfather started making wine in the mid-1900s. After working in Bordeaux where Georges had the opportunity to work extensively on red wines, he started working part-time for the family vineyard in 2005 and at the same time successfully developed a small service company for other wineries.
Thanks to discussions with other winegrowers, he moved more and more towards sustainable methods and when he officially took over the reins of the family business in 2011, he decided to definitively abandon the use of any chemical substances by converting the company to organic farming, complete with certification. In 2013, after various experiments, Georges began producing Champagne. Most of the vineyards are located in Bouzy and Tauxieres, an area of dark clay soils rich in silica and chalk.
The secret of his cuvées is the continuous study and experimentation that led him to approach not only organic methods but also biodynamic principles in order to reduce the use of sulphites in vinification to a minimum. The wines are made with as little intervention as possible. The fermentations are spontaneous in barrels and refinement on their lees until bottling, which takes place following the lunar cycles.
