The Domaine Jacques Lassaigne is a Champagne producer located in Montgueux. It was founded by Jacques Lassaigne who, thanks to painstaking work together with his son Emmanuel Lassaigne, has become a true Montgueux reference. Today, Emmanuel owns just 4 hectares of vineyards but makes wine from 5.5 hectares. The rest of the grapes purchased are mainly Chardonnay from 50-year-old vineyards in Montgueux, a choice made to obtain grapes from the same terroir but from different areas to enrich and refine his cuvées.

The Champagnes of Domaine Jacques Lassaigne are in fact famous for their great elegance and minerality. On this hill, where the soil is mainly chalky, 88% of the grapes are Chardonnay, while the remaining clay soil is planted with Pinot Noir. The vineyards are ideally oriented east/south-east and many have compared the terroir of Montgueux to that of Montrachet. Emanuelle Lassaigne cultivates their vines with the utmost care and respect for nature, according to organic and biodynamic farming principles:

in the vineyard, grassing is preserved and all chemicals are limited to the maximum, in the cellar, fermentations are spontaneous, vinifications are separate for each parcel, the cellar is often heated to encourage the triggering of malolactic fermentation, but Lassagine claims to use virtually no oenological products. One of his characteristics is that he puts bottle-aged wines back into the tank to refine his cuvées, and all his Champagnes have rather low dosages to allow the wine to reflect its terroir of origin in the purest and most authentic way.
