PARASCHOS

Paraschos is a family-run winery located in San Floriano del Collio, north of the city of Gorizia in Friuli. Always very attentive to the cultivation of the vineyards and respect for the environment, it bases its work on traditional and sustainable principles in respect of the terroir of origin, and since 2003 it no longer uses any chemical substances either in the vineyard or in the cellar in favour of only copper, sulphur and propolis.

The 6 hectares owned by Paraschos are spread over 10 terraced vineyards in Slatnik, between San Floriano and Oslavia, on a typical and characteristic soil, the famous "ponca", consisting of marl rich in minerality of Eocene origin. Paraschos pays great attention to the care of the vineyard and to achieving perfect ripeness of the grapes, which are stripped of their stalks and left to macerate with the skins in open vats.

Fermentation takes place spontaneously without selected yeasts, followed by long ageing in large oak barrels with their own yeasts. Sources from the 18th century report that in Friuli, in the area of Vipacco and Collio, the practice of fermenting grape must with its skins for a few days in vats, before pressing, was already widespread, in order to improve the flavour, aroma and durability of the wine over time.

Paraschos wines are pure and authentic expressions of the Collio Friulano terroir: wines that are created without haste, waiting for nature to take its course.
