Domaine Ponsot
Domaine Ponsot was founded in 1872 in Burgundy by William Ponsot and today owns vineyards in the most prestigious crus of the area, including Clos de la Roche, Clos des Monts Luisants, Gevrey-Chambertine Les Combottes and Charmes Chambertin.
Always a family business, the company is now run by Laurent, Catherine and Stephanie Ponsot, who pursue an interventionist philosophy based on the combination of tradition and innovation, with great attention and respect for the terroir and the fruit.
Minimal intervention both in the vineyard and in the cellar and a great deal of patience allow them to obtain wines that are authentic and expressive of their terroir.
The grapes are harvested by hand, then placed in small crates and transported to the cellar, where gravity helps the vinification process.
Fermentation and maceration take place in open truncated conical tanks, refinement takes place in strictly used oak barrels, no filtration is carried out and the use of sulphur dioxide in the cellar is reduced to a minimum.
