TAUPENOT MERME
Taupenot Merme, authentic wines from Burgundy
The domaine Taupenot Merme is located in Burgundy in the village of Morey St Denis, and was founded in 1963. Today the estate consists of 13 hectares of vineyards, located between Cote de Nuits and Cote de Beaune, comprising twenty appellations divided between grand crus, 1er crus and village, from vines that have an average age of 35 years and over 60 years for some grand crus.
Jean and Denise, who now manage the estate, have extended the vineyards and increased the prestige of the Domaine, which today produces 19 appellations, both red wines based on pinot noir and white wines based on chardonnay. The company has embraced a sustainable production philosophy that respects the land, and since 2001 all the vineyards have been certified organic.
Fermentation takes place spontaneously using only indigenous yeasts, while ageing takes place for between 12 and 14 months on the lees, with the Grand Cru wines being 40% new oak, 30% for the 1er Crus and around 20% for the Villages. Finally, the wines are transferred to stainless steel tanks for 3 months before bottling, without filtering.
