THOMAS-LABAILLE
Jean-Paul Labaye continued to lead with perseverance the work of his father-in-law Claude Thomas, one of the great interpreters of Sancerre, together with Cottard and Vatain (the so-called 'Wizard of the Three Thrones'). Jean-Paul was self-taught: he was not a natural oenologist, but he learned humility early on and took over from Claude when the time came.
The Park of the Vineyards is one of the most important parks in Chavigno, with fine vineyards and old vines. A major renovation of the cellar has been completed in recent years. While it is true that the new factory does not have the charm of the old factory, it must be said that tidiness and cleanliness have a great influence on the quality of the final product.
At the same time, the old wine barrels are discarded, but the working and production processes in the vineyard and in the cellar remain the same, where we find concrete and steel tanks, as well as old wooden barrels, so as not to leave too many traces on the wine. His 'Sancerre' L'Authentique is the highest expression of Sauvignon in the range.
