TIMO MAYER
Timo Mayer's is a small farm producing artisanal wines in Australia. Timo, originally from Germany, left his homeland to move to the Yarra Valley and organically farms a 2.5 vineyard called Bloody Hill, because it is 'bloody steep'.
From this vineyard and a couple of other single vineyard sites, he produces artisanal wines using sustainable and environmentally friendly methods, bottles that favour elegance and purity over strength and flashiness.
His production style involves whole cluster fermentation, which increases complexity and gives silkier tannins and more freshness. He calls himself 'just a farmer', but in reality he is a true legend in Australia, with wines produced in limited quantities that are rich in character and expression.
