Tre Mat: the Prosecco "as it once was"
The Tre Mat company was born in 2009 in Santo Stefano, a small hamlet of Valdobbiadene, in the Veneto region, and sees the production of the first bottles in the 2010 - 2011 harvest with Gianni Bortolin, the current owner of the estate, the last of several generations of winemakers in his family.
A fundamental element that allowed the birth of the "Tre Mat" company was the recovery by Bortolin of the historic vineyard (from which the renowned Valdobbiadene Finalizzato is produced) which is located in a very steep and uncomfortable position, a condition that has not allowed previous owners to use mechanized processes such as the grubbing up of unproductive strains and access to vineyards with tractors.
Gianni is firmly convinced that he wants to produce Prosecco "as it once was", according to the ancient traditions handed down by his ancestors, who "in the rows alternated different types of vines to give perfume, acidity and support to the wine directly from the pressing, without further intervention in the cellar ".
When confronted with today's producers, whose interest is mostly focused on business rather than on traditions and respect for the vine, they take him three times crazy: "Crazy to make sparkling wine with three months storage in the autoclave, crazy to clone the vines, crazy to harvest in September, to autoclave the wine in March, going on the market in July and not in December putting an old wine on the market ": hence the name of the company "Tre Mat".
