The production philosophy of the winery is based on the principles of biodynamics, aiming to preserve the environment and produce wines that fully reflect the authentic characteristics of the terroir. Fermentation takes place in open vats using only indigenous yeasts, while aging in 54-liter glass damigiane during the winter months allows the wine to acquire a complex and harmonious structure. With special care for the bottling moment, carried out during the waning moon, the wine undergoes natural malolactic fermentation in the bottle, emphasizing the purity of the production process.
