Dyonisos 2021 Domaine du Mortier
Dyonisos is a cuvée from Saint Nicolas de Bourgueil produced by Cyril and Fabien Boisard of Domaine du Mortier. The name recalls Dionysos, the Greek god of vines, wine and excess, a clear reference to the richness and complexity of this wine.
The grapes used for Dyonisos come from old vines over 50 years old of Cabernet Franc, planted on clay-limestone soils known locally as “tuffeau.” Harvesting is done manually, followed by natural fermentation and maceration for about 20 days in wooden tanks. Aging takes place for 12 months in 5- to 10-year-old oak barrels, which give the wine depth without overpowering its character with excessive woody notes.
This aging process allows the wine to develop remarkable complexity: initially dominated by red fruits such as raspberry and currant, with time it evolves into more complex notes of spice, underbrush and animal nuances. Dyonisos is a wine that requires at least 2-3 years of bottle aging to reach its full potential and can be stored for 8-10 years or more.
On the palate, Dyonisos shows a deep red color with purple highlights. Red fruit aromas emerge on the nose, supported by a light mineral note. In the mouth, the wine is full and round, with a distinct presence of berries, a solid mineral aftertaste and a spicy finish.
