Les Sables 2022 Domaine du Mortier
Les Sables from Domaine du Mortier is a wine made from Cabernet Franc grapes grown on sandy soils characterized by alluvium and sediment from the Loire. The vines, aged between 15 and 60 years, are spread over seven different plots and offer a yield of about 43 hl/ha.
Harvesting is by hand and the whole bunches are transferred to 70-hectoliter concrete tanks for a traditional low-temperature fermentation that lasts about 14 days. Fermentation is started using natural yeasts from previous vintages. After fermentation, the wine remains in tanks for about 6 months before being bottled with an addition of 16 mg per liter of sulfur.
Les Sables is distinguished by its lightness and great fruitiness, expressing aromas of small red fruits. The tannins are silky and round, making the wine particularly pleasant to drink young, within 3-4 years of harvest. It is ideal for serving at a moderate temperature of 15-16°C and is a perfect match for a full meal.
