The Saint-Véran "Champ Rond" 2018 from Domaine Thibert is a premium white wine that epitomizes the elegance of Burgundy terroir. Sourced from the "Champs Ronds" plot in the village of Leynes, this wine benefits from a unique plateau location with a slight 5% slope, ensuring excellent drainage and concentrated aromas.
In the glass, it displays a golden-green hue. The nose is intense and delicate, with notes of citrus, white flowers (acacia), and evolving aromas of hazelnut, roasted almond, and honey with age. On the palate, it showcases the classic opulence and elegance of Saint-Véran wines, complemented by fresh citrus acidity and refined minerality, a clear reflection of the limestone and gravel soils.
Vinified and aged for 18-22 months, the wine spends 11 months in barrels, developing structure and complexity, followed by stainless steel vats to preserve freshness. Bottling occurs with minimal or no filtration to maintain purity.
Best enjoyed after 5-6 years of aging, it pairs beautifully with Bresse poultry, veal sweetbreads with morels, or delicate fish dishes. It also complements goat cheese, spicy dishes (such as curry), veal roasts, and andouillette.
