Sancerre Les Cailottes 2011 Pascal Jolivet
Pascal Jolivet's 2011 Sancerre "Les Caillottes" is a naturally produced white wine from the Loire Valley. It is one of the best expressions of Sauvignon Blanc in the region, with its own personality and characteristics that distinguish it from the other Sauvignons in Pascal Jolivet's range.
"Les Caillottes" faithfully reflects the characteristics of the homonymous parcel from which it comes, from vines cultivated on soils predominantly composed of Kimmeridgien limestone, which gives the wine intense minerality.
Fermentation takes place with indigenous yeasts in steel tanks, where it remains for a period of maturation on the fine lees before being bottled. The wine shows an intense straw yellow colour, while the elegant nose offers scents of citrus fruits, white peach, lime zest and iodised notes. The taste is fresh and lively, with an intensely savoury and mineral finish.
