Sancerre Les Romains 2017 Domaine Fouassier
Sancerre Les Romaines 2017 is a Loire white wine produced according to natural methods by Domaine Fouassier. It is made from pure Sauvignon grapes coming from vineyards of about 30 years of age, with southwest exposure on soils rich in siliceous clay. The winery has about 56 hectares of vineyards which are cultivated according to biodynamic farming principles. After a careful harvest, the grapes are delicately destemmed and decanted and then undergo spontaneous alcoholic fermentation, using only indigenous yeasts, in 30/100 hectoliter stainless steel containers for a few weeks. Afterwards the wine is aged on its fine lees, in the stainless steel containers where the alcoholic fermentation took place, for about 8/12 months. Sancerre "Les Romains" of Domaine Fouassier shows a brilliant straw yellow color. The nose reveals intense aromas of white and yellow pulp stone fruit, including peach and plum, citrus and floral hints of white flowers, hints of aromatic herbs, including sage, and wet rock minerals. In the mouth, it is structured, complex and elegant.
