Fanny Sabre's Savigny-Lès-Beaune is a standout among Burgundy's red wines. Originating from over thirty-year-old Pinot Noir vines cultivated on clay-limestone soils in the municipality of Savigny-Lès-Beaune, this wine embodies the perfect balance between elegant structure and aromatic complexity.
The grapes, handpicked, are directly pressed and vinified with a more or less prolonged infusion, without the addition of sulfites or other additives, using natural yeasts. Aging takes place for 12 months in Burgundian barrels of 228 liters, at which point Fanny Sabre adds a slight addition of sulfites to ensure the wine's stability.
With a production limited to just a thousand bottles, this extraordinary red Savigny-Lès-Beaune offers a complex aromatic profile, with notes of ripe black fruits (blackberries, blackcurrants), wild plums, violets, and sweet spices. On the palate, it presents itself refined and complex, while its carmine red color with slightly fuchsia reflections catches the eye.
