Vin de France Chenin d'Aileeurs 2018 Chidaine
Chenin d'Aileeurs from Domaine Chidaine is a fine white wine produced in the Loire region of France. The grapes come from an exceptional terroir located in the Touraine area, which offers ideal conditions for the cultivation of Chenin Blanc.
The vinification of this wine begins with the manual harvesting of the grapes, which are carefully selected to ensure maximum quality. After soft pressing, the must is fermented in French oak barrels, where the wine remains in contact with its lees for a period of 12-18 months.
Chenin d'Aileeurs is a wine of great elegance, with an intense and complex aromatic profile. On the nose, one perceives notes of yellow-fleshed fruit, such as apple, pear and peach, accompanied by aromas of honey, beeswax and a delicate mineral note. In the mouth, the wine is structured, with a marked acidity that accentuates its freshness and liveliness. The structure is important, but well balanced, with a long and persistent finish that once again recalls hints of fruit and honey.
It lends itself well to ageing, thanks to its structure and complexity. However, it can also be enjoyed when young, especially when paired with fish or shellfish dishes, or with medium-aged cheeses. Its freshness also makes it an excellent aperitif wine.
Domaine Chidaine uses organic and biodynamic cultivation methods to produce this wine, in order to obtain grapes of the highest quality and to respect the environment. The result is a wine that fully expresses the characteristics of its terroir and the work of the producer, who tries to make the most of the particularities of the Chenin Blanc.
