Gilbourg Benoit Courault
In his five hectares of vineyards, Benoit Courault cultivates grolleau, cabernet franc, and chenin blanc using horse-drawn plows. It's the latter variety that takes center stage in Gilbourg, sourced from fifty-year-old vines planted on shallow loamy soil with veins of decomposed schist.
Hand-harvested grapes are pressed directly, then the juices ferment with native yeasts in stainless steel vats and barrels before an eight-month aging period in barrels and casks of various wines. The cuvée is then bottled without clarification or filtration. Sulfites are also banned by this winemaker, renowned for many years in the world of natural wines.
Its golden color releases an intense aroma, blending pear, apple, and beeswax. The palate, elegant and fresh, is characterized by a crisp, taut structure that leads to a savory finish of good persistence.
