"Les Gélinettes" 2022 Ferme de la Sansonnière
The Vin de France "Les Gélinettes" by Ferme de la Sansonnière is a wine of great character, made exclusively from Cabernet Sauvignon grapes grown in the Loire region. This vineyard of just 0.3 hectares is cultivated according to biodynamic principles, with a gobelet training system and an average density of 6,000 vines per hectare. The vines, with an average age of 15 years, are rooted in schist and sandy soils, giving the wine a distinctive minerality.
The harvest is strictly manual, ensuring the selection of the best grapes. Fermentation is spontaneous and takes place in steel tanks, followed by a one-month maceration on the skins in used double oak barrels. The wine is then aged for 12 months in the same containers, without the addition of sulfites, to preserve the integrity of the terroir.
"Les Gélinettes" is a full-bodied, enveloping, and smooth wine that combines charm and grit. On the nose, it reveals scents of black fruits, spices, and a rustic note that gives way to underlying elegance. On the palate, its airy texture is savory and fruity, with excellent structure promising a long aging potential, over 25 years.
Produced in about 1798 bottles, this wine pairs perfectly with dishes of shellfish, structured freshwater and saltwater fish, and pasta with sardines, raisins, and pine nuts, enhancing each bite with its power and elegance.
