Nuova Descriptio 2022 from Domaine de Moor is a masterpiece of winemaking, narrating the story of Courgis terroir. Rooted in the rocky, limestone soil of Kimméridgien, it imparts character and complexity to its wines. With just a 1-hectare vineyard, cultivated using simple and double Guyot systems and a density of 7,500 vines per hectare, its 40-year-old vines yield an average of 50 hl per hectare.
Winemaking is a meticulous ritual: Sauvignon Blanc and Gris ferment in amphorae for 25% of the mass, while Aligoté undergoes whole-cluster maceration for 11 days and Chardonnay develops in barrels. After 11 months of aging in barrels and amphorae, followed by transfer and blending in tanks for six months, Nuova Descriptio succeeds the "Sans Bruit" vintage. It blends Sauvignon Blanc and Gris from the Saint-Bris appellation with Aligoté maceration and a few barrels of Chardonnay.
