Vin Santo di Carmignano 2010 Fattoria di Bacchereto
Vin Santo di Carmignano 2010 is a Tuscan dessert wine produced using natural methods by Fattoria di Bacchereto. It is made from Trebbiano Toscano and Malvasia del Chianti grapes, typical of the area and cultivated according to biodynamic farming methods, which come from a small vineyard of about one and a half hectares on limestone-clay soil.
The grapes are dried on cane mats in an airy environment for about 3/4 months, then lightly pressed to obtain the must. The must is fermented several times with indigenous yeasts in small 70-litre chestnut barrels, in which it matures for 9 years before bottling.
The Vin Santo 2010 has a marvellous, very luminous amber yellow colour. The nose expresses a complex and intense bouquet of honey and caramel aromas that blend harmoniously with genuine and enveloping scents of chestnuts and dried fruit, figs and apricots. The taste is sweet and velvety, yet balanced by an excellent freshness. It is historically paired with Cantucci di Prato, but is also excellent when tasted alone, as a meditation wine.

GRAPE VARIETIES: Sangiovese 75%, Canaiolo Nero 10% and Cabernet Sauvignon 15%.
VINIFICATION: Destemming, maceration and alcoholic fermentation with natural yeasts for 15 days in vitrified cement vats. Maturation for 12-18 months in 350-litre Allier oak tonneaux on the fine lees, then at least 6 months in the bottle.
