Olek Bondonio's Red Wine, produced at the picturesque Cascina La Berchialla, is an authentic expression of the Piedmontese terroir. Made from a careful blend of indigenous grapes, including Nebbiolo, Barbera, and Dolcetto, this wine strikes the perfect balance between tradition and innovation.
Olek Bondonio's vineyards are located on the hills of the Langhe, a region renowned for the quality of its grapes due to its unique terroir. The vineyards, cultivated using organic and environmentally friendly methods, benefit from soils rich in clay and limestone, as well as a favorable microclimate that contributes to the optimal ripening of the grapes.
Olek Bondonio's production philosophy is oriented towards minimal intervention in the cellar to preserve the intrinsic characteristics of the grapes. Fermentation occurs spontaneously in wooden barrels thanks to indigenous yeasts. After fermentation, the wine matures in oak barrels, where it gains complexity and depth without the addition of clarifiers or filtration.
Visually, Olek Bondonio's Red Wine presents a lively ruby color, enriched with garnet reflections that indicate its evolution. The bouquet is complex and enveloping, with notes of small red fruits such as cherries and raspberries, intertwined with floral hints of violet and nuances of underbrush. Delicate notes of toasting and spices complete the aromatic profile, giving the wine a particular elegance.
