Volnay 2022 Fanny Sabre
Volnay from the Domaine led by the very young Fanny Sabre is made from Pinot Noir grapes from the village of Volnay, located in the central part of the Côte de Beaune in Burgundy. The grapes come from Domaine-owned vineyards located in the "Les Brouillards," "Clos des Chênes," and "Les Caillerets" parcels.
The vineyards are between 30 and 60 years old and are farmed organically. As with Gevrey-Chamabertin, the vines are pruned using the Guyot system and the bunches are controlled to achieve low yields. The grapes are harvested by hand.
Again, Fanny Sabre follows her philosophy of producing organic wines that enhance terroir. The grapes are vinified with alcoholic and malolactic fermentation in cement and oak tanks and aged in used barrels for 18 months.
Volnay 2022 has a light ruby red color, typical of Pinot Noir in this area. The nose has floral aromas of violet and rose, accompanied by notes of cherry, raspberry and a hint of underbrush. In the mouth, it is a sleek and elegant wine with delicate tannins and marked acidity. It presents a fresh finish with floral returns. It embodies the typical Pinot Noir style of Volnay vineyards.
